Now I live far away in another country when there is no other kendurian event, I miss this traditional cake too ;-). Of course, there is no standard recipe for making a Layer Cake, you can vary according to taste and availability.

Layer cakes can be made from rice flour, starch, rice flour, and even wheat flour. Usually the property is a combination or a combination of the two. Often, the dough for layer cakes is a mixture of neutral flour (rice, wheat) mixed with sticky flour (glutinous rice, starch). Items:

300 grams of fresh rice flour (use ready-made flour if you don't have it)
100 g tapioca flour / starch / sago

How to do it:

Put pandan leaves and kaffir leaves in a pot, pour coconut milk.

Discard pandan leaves and kaffir leaves. Still completely rejected.
Sift the rice flour, starch and granulated sugar into a large bowl or bowl.
Pour in the coconut milk little by little while stirring until it becomes a smooth and homogeneous mixture. Salt, mix well and enjoy.
If necessary, add sugar or salt to taste.
Divide the batter into three cups or bowls.
Give 1 part red, 1 part green and 1 part white.
Prepare a plastic bag or something warm with a minimum size of 18x18x8cm, wash each wall with vegetable oil.
(Put the bottom in plastic to make it easier to remove the lid or avoid streaks if you cut it directly from the pan).
Heat enough water in a large pot or steamer to boil and release steam.
Place an approved tin or plastic bag into the steamer.
Pour 100 ml of red batter, cover the pan, steam for 10 minutes.
Pour over a white sheet, steam for 10 minutes, then paste the green leaf.
Repeat the same process until the batter is used up.
(You can also use a ladle size or other size, it is important that the number is the same for each layer).
Finally, once the surface is firm, bake again for 15 minutes.
Remove and refrigerate. Remove from box or plastic bag, cut to taste.

If the recipe is limited, feel free to use only half of the recipe, especially for those who want to try it for the first time or don't have time. If you don't like the color, divide the dough into 2, add 1 flour and 30 gr/2 tablespoons of cocoa powder. Remove lime leaves, use only pandan leaves. The breathing system allows the water to escape quickly. Check and add flavored water if the number starts to decrease. If you are too lazy to pour it several times, please pour another solution, but the steaming process for each layer will take more time.
